So here’s what we did (Dolo and I…):

Sauteed the onions in olive oil and honey, cooked the chicken in white wine with a few random seasonings, and then broiled the bread with goat cheese on it, and then compiled it all into one outrageously delicious little sandwich. My inspiration came from Sevilla, when I ordered something similar around midnight in one of the town plaza’s with a glass of oaky red wine. Ooh baby. I have to say I am completely satisfied with the replication of my wonderful Andalusian experience. (Yes, that means we drank wine with these puppies as well… given.)
